Ingredients:
- 2 cups plain flour
- 1 tbsp baking powder
- ½ tsp salt
- 2 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- ¼ cup cold unsalted butter, cubed
- ½ cup pumpkin puree
- ⅓ cup light brown sugar
- 1 large egg
- ¼ cup milk (plus extra for brushing)
- 1 tsp vanilla extract
- Currants or raisins (optional)
Instructions:
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
- Add the cold butter cubes to the dry ingredients and rub in with your fingertips until the mixture resembles coarse breadcrumbs.
- In a separate bowl, whisk together the pumpkin puree, brown sugar, egg, milk, and vanilla extract.
