These chai spiced oatmeal cookies are soft, chewy, and lightly spiced with a mix of cinnamon, cardamom, and cloves. Ingredients:
- 125g unsalted butter, softened
- 100g brown sugar
- 50g granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 150g plain flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground allspice
- 150g rolled oats
- Optional: 50g raisins or chopped nuts
Instructions:
- Preheat your oven to 180°C (160°C fan) or Gas Mark 4, and line a baking tray with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, salt, and chai spices (cinnamon, cardamom, ginger, cloves, and allspice).
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Stir in the rolled oats, and if you're feeling fancy, toss in those raisins or chopped nuts.
- Drop spoonfuls of the dough onto the prepared baking tray, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the cookies are golden around the edges but still soft in the middle.
- Let them cool on the tray for a few minutes before transferring to a wire rack to cool completely.
